Cocktail for a summers day :: pea shoot happiness
Ingredients
- Pea shoot puree
- 50g of Pea Shoots (1 bag)
- 100ml cold water
- To make a pea shoot puree, blend, in a liquidizer, the pea shoots with just enough water to make a puree.
- Pea Shoot Gin Flower
- 50ml gin
- Dash elderflower cordial
- 4 mint leaves
- 50ml pea-shoot puree
- 8 X 1cm cubes of cucumber
Place all ingredients into a cocktail shaker. Shake and strain into a highball glass over ice.
Add the cubes of cucumber. Top with ginger ale and serve with a straw and an asparagus spear.
