Cocktail for a summers day :: The Peatini
- Pea shoot puree
- 50g of Pea Shoots (1 bag)
- 100ml cold water
- To make a pea shoot puree, blend, in a liquidizer, the pea shoots with just enough water to make a puree.
- 50ml Hendrick’s gin or another gin of your choice
- 50ml pea-shoot puree
- 40ml gomme (sugar syrup)
- 2 wedges lemon
Place the gin, puree, sugar syrup in a cocktail shaker, squeeze lemon into the shaker. Shake (with lemon wedge in) and strain into a coupe glass. Garnish the glass with a wedge of lemon and double pea shoot on the top.
