Cocktail for a summers day :: The Peatini


  • Pea shoot puree
  • 50g of Pea Shoots (1 bag)
  • 100ml cold water
  • To make a pea shoot puree, blend, in a liquidizer, the pea shoots with just enough water to make a puree.
  • 50ml Hendrick‚Äôs gin or another gin of your choice
  • 50ml pea-shoot puree
  • 40ml gomme (sugar syrup)
  • 2 wedges lemon

Place the gin, puree, sugar syrup in a cocktail shaker, squeeze lemon into the shaker. Shake (with lemon wedge in) and strain into a coupe glass. Garnish the glass with a wedge of lemon and double pea shoot on the top.
