"Who first thought of eating pea shoots I wonder? Whoever it was discovered a gem of a baby leaf. Pea Shoots are always my first choice for a spring/summer salad and even into the winter for that matter. They have that delicious concentrated, but fresh pea taste, which makes them a perfect leaf for a delicate and sophisticated summer salad.

The Chinese have been using Pea Shoots for years, just tossed into a wok and we shouldn’t think twice about using them in the same way – as they are so versatile. Pea Shoots are fast becoming a quintessentially British ingredient that are eagerly anticipated on the seasonal food calendar. Aside from the fact that they taste great and look stunning on the plate, they are jam packed with vitamins A and C, so you won’t feel too guilty about using and abusing them in the kitchen."
